To celebrate the upcoming movie Luca, Disney was so nice to send me over a Blue Apron fresh food delivery! I was so excited and have used their products before! I enjoy cooking and this recipe was made within minutes! I made this the other day for me and my son and he loved it! Such a very light and hearty meal too!
Dive into a culinary adventure this summer with this recipe celebrating Disney and Pixar’s Luca, available to stream on Disney + starting June 18th. Trout gets a bright lift from a piquant vinaigrette—made with chopped niçoise olives and dijon mustard whisked together with olive oil and red wine vinegar—that dresses both the fish and the bed of arugula served underneath. - 2 Skin-On Steelhead Trout Fillets
- 4 oz Grape Tomatoes
- 2 oz Arugula
- 6 oz Green Beans
- ¾ lb Golden Or Red Potatoes
- 1 oz Pitted Niçoise Olives
- 2 Tbsps Red Wine Vinegar
- 1 Tbsp Honey
- 1 Tbsp Dijon Mustard
- 1 tsp Whole Dried Oregano
Prepare the ingredients
Remove the honey from the refrigerator to bring to room temperature
Arrange two oven racks in the upper and lower thirds of the oven, preheat to 450 degrees
Wash and dry the produce
Dice potatoes
Cutt off and discard any stem ends from the green beans
In a bow, combine the halved green beans and tomatoes(optional). Drizzle with olive oil and season. Stir to coat
Roast Veggies
Transfer to diced potatoes to a sheet pan. Drizzle with 1 teaspoon of olive oil and season. Arrange in an even layer on one side of the sheet pan.
Place on the upper oven rack and roast for 10 min
Leaving the oven on, remove from oven. Carefully transfer the season green beans to the other side of the sheet pan.
Return to the upper oven rack and roast 8-10 min
Transfer to a large bowl and set aside to cool
Roast The Fish
Meanwhile transfer 1 teaspoon of the mustard to a bowl, set aside
Pat the fish dry with paper towel on both sides and season
Transfer to a separate sheet pan skin side down
Evenly sprats or brush the remaining mustard onto the fish
Place on lower oven and roast for 10-15 minutes
Remove from oven
